Founded in 2024 by Martino Uzzauto, Carnissage is rooted in over 70 years of family expertise in sourcing the world’s finest meats – a heritage reimagined through a contemporary lens.
Here, prime cuts, marble, design, and flame merge into a refined ritual of taste. More than a steakhouse, Carnissage is a destination where craftsmanship, legacy, and atmosphere come together to celebrate the timeless pleasure of gathering around exceptional meat.

At the heart of the restaurant is our in-house dry-aging room, where time becomes an essential ingredient, shaping depth, texture, and character.
Our meats are sourced from exceptional farms across Europe, Australia, and Japan – selected through long-standing relationships and guided by a deep understanding of breed, provenance, and maturation.

The lively bar serves contemporary cocktails and greets diners on arrival to lead them into the main dining room, guests can unwind over a well-crafted cocktail, a great selection of wines and champagne while enjoying the musical retro beats.
