A unique experience

Il concept di Carnissage propone una vera e propria esperienza di degustazione dedicata alle razze di carne più pregiate, selezionate con cura dai nostri allevamenti in Italia, Europa e Australia. Il menu include razze rinomate come la Rubia Gallega e il Wagyu, tra le più celebri, ma la selezione si estende a livello globale, comprendendo Marchigiana, Danese, Black Angus e molte altre, disponibili in una varietà di tagli e periodi di frollatura, dai 25 ai 180 giorni.

The appetizers are inspired by international street food, with dishes designed for sharing that range from meat and seafood to vegetables. Special attention is given to gluten-free options.

The name "Carnissage" is derived from the fusion of "Carne" (Meat) and "Vernissage," highlighting its deep connection with art and design.

DRY AGING ROOM

Aging is a process that enhances the quality of the meat, making it extraordinarily tender and intensely flavorful. In a controlled environment with regulated temperature, humidity, and ventilation, natural enzymes break down the muscle fibers, while moisture loss concentrates the taste. Over time, a protective crust forms, preserving the heart of the meat and giving it a unique depth of flavor. At the end of the aging process, the crust is removed, and the meat, cooked over the coals on our Josper grill, releases unmatched aromas and textures. However, not all meats can be aged: only the best selections from controlled farms, with proper marbling and excellent quality, can truly benefit from this process.
